I really enjoy to eat food and a lot of it. I am always trying to find foods that are “volume” foods. Foods I can eat at a higher quantity but have a lower caloric impact. These foods luckily are very nutritious!
I had a spaghetti squash and I did not want to do a red sauce variation so I came up with this delicious Spaghetti Squash recipe! Here’s what I did:
Cook time 55 minutes
Total time 60 minutes
1 Spaghetti Squash
1 Onion (I used half red and half of a white)
4 Handfuls of Spinach
Salt
Pepper
Chili and Lime Spice (can get from Trader Joes)
Garlic Powder
Preheat oven to 375 Degrees.
Cut Spaghetti squash in half. Scrape out seeds. Sprinkle the inside with olive oil, salt and pepper.
Place spaghetti squash face down(inside facing down) on a baking sheet. (I covered my baking sheet in parchment paper for easy cleanup).
Bake the squash for 45 minutes.
When the squash was almost done, with 5 minutes left, saute the onions with spices, salt, pepper, chili Lime, and garlic powder.
When the Squash is done, using a fork, scrape the inside out and put the squash into the pan or pot where you have the onions.
Add the 4 handfuls of spinach or more if you wish. Cook on low-medium heat until the spinach begins to wilt.
Add more spices if you feel it’s needed.
