Chocolate Chip Cookies Sweetened with Banana

Recently, like always, I was craving chocolate chip cookies. This cookie is made of whole, organic, natural ingredients combined together to provide a delectable crunchy, but chewy, explosion of sweetness and chocolate in your mouth. INGREDIENTS:

  1. 6 ounces chocolate chips

  2. 3 bananas

  3. 1 tsp vanilla extract

  4. 1/4 cup coconut oil

  5. 2 cup old fashioned oats

  6. 2/3 cup almond flour

  7. 1/3 cup coconut flakes

  8. 1/2 tsp cinnamon

  9. 1/4 tsp salt

  10. 1 tsp baking powder

STEP 1: Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper. Chop the chocolate into small chunks. STEP 2: In a large bowl, mash the bananas until smooth. Whisk in the vanilla and oil. STEP 3: In a medium bowl, combine the oats, almond meal, coconut, cinnamon, salt, and baking powder. Add to bowl with bananas and stir until combined. Fold in chopped chocolate. With level tablespoon measure, drop dough onto lined pans, spacing 1 inch apart. Press tops to flatten. STEP 4: Bake 12-20 minutes, until golden brown around edges (cook time was all over the place so just watch until golden brown, without bottoms burning) Cool on a wire rack.

PER SERVING: Makes 37 cookies, serving size 1 cookie, 55 calories, 3g Fat, 6g Carbohydrates, 2g fiber, 1g protein
